Vegetable Kebabs with Mozzarella Recipe

 

Ingredients

 

Serve 4

  • 2 zucchini/courgettes, thickly sliced

  • 1 medium eggplant/aubergine, thickly sliced

  • 8 baby Mozzarellas (bocconcini)

  • 16 cherry tomatoes

  • 8 leaves fresh basil

  • salt and freshly ground black pepper to taste

  • 1 tbsp extra-virgin olive oil


Method:

  1. Arrange the zucchini and eggplant in a grill pan and grill for about 4 minutes, or until tender.

  2. Thread the vegetables onto wooden skewers alternating with the Mozzarella, tomatoes, and basil leaves.

  3. Season with salt and pepper and brush with the oil.

  4. Cook on the grill for about 5 minutes, or until the cheese and tomatoes are heated through. Serve hot.
