Kebabs with Mozzarella Recipe
Ingredients

2 zucchini/courgettes, thickly sliced

1 medium eggplant/aubergine, thickly sliced

8 baby Mozzarellas
(bocconcini)
-
16 cherry tomatoes
-
8 leaves fresh basil
-
salt
and freshly
ground black pepper to taste

1 tbsp extra-virgin olive
oil
Method:
-
Arrange
the zucchini and eggplant in a grill pan and grill
for about 4 minutes, or until tender.
-
Thread the vegetables onto wooden skewers
alternating with the Mozzarella, tomatoes, and basil
leaves.

Season with salt and pepper and brush with
the oil.
-
Cook on the grill for about 5 minutes, or until the
cheese and tomatoes are heated through.
Serve hot.
