Tomato and Bread Bake Recipe

 

Ingredients

 

Serve 4

  • 4 slices whole­wheat bread, toasted and cubed

  • 5 firm-ripe tomatoes, thinly sliced

  • 5 oz/150 g Emmental or Gruyere cheese, thinly sliced

  • 6 large eggs

  • 2/3 cup/150 ml milk

  • 1 tbsp finely chopped parsley

  • salt and freshly ground black pepper to taste


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter a deep 8-inch (20-cm) baking pan.

  2. Arrange the bread, tomatoes, and Emmental in layers in the prepared baking pan.

  3. Beat the eggs, milk, and parsley in a large bowl. Season with salt and pepper.

  4. Pour the mixture into the baking pan. Bake for 20  minutes, or until set and golden.

  5. Turn out onto a serving dish and serve hot.
