Tomato and
Bread Bake Recipe

wholewheat
bread, toasted and cubed

5 firm-ripe tomatoes,
thinly sliced

5 oz/150 g Emmental
or Gruyere cheese, thinly sliced

6 large eggs
-
2/3 cup/150 ml milk

1 tbsp finely chopped parsley
-
salt and freshly ground black
pepper to taste
Method:

Preheat
the oven to 400°F/200°C/gas 6. Butter a deep
8-inch (20-cm) baking pan.
-
Arrange the bread, tomatoes, and Emmental in layers
in the prepared baking pan.
-
Beat the eggs,
milk, and parsley in a large bowl. Season with salt
and pepper.
-
Pour the mixture into the baking pan. Bake for 20
minutes, or until
set and golden.

Turn out onto a serving dish
and serve hot.
