Method:

Cook the beets
in salted, boiling water for 30-35 minutes, or until
tender.

Cook the
onion in
salted, boiling water for 5 minutes, or until softened. Drain and pat
dry with paper towels.

Peel the beets and
dice them. Sauté the beets
with the butter, water, vinegar, and sugar in a
large frying pan over low heat for 5 minutes.

Place the beets on a
serving plate and spoon the onions into the center. Serve warm.
