Spicy Rice and Lentil Burgers Recipe

 

Ingredients

  • 1 cup/180 g cooked rice

  • 3 cups/300 g brown lentils, cooked and drained

  • 1 carrot, peeled and coarsely grated

  • 1 cup/125 g fine dry bread crumbs

  • 2 tbsp smooth peanut butter

  • 2 tbsp finely chopped parsley

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1/4 tsp salt

  • 6 tbsp sesame oil


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Oil a baking sheet. 

  2. Use your hands to mix the rice, lentils, carrot, bread crumbs, peanut butter, parsley, basil, oregano, paprika, and salt in a large bowl to make a stiff dough.

  3. Form the mixture into burgers about 3 inches (8 cm) in diameter and 1 inch (2.5 cm) thick. The mixture will make 8-10 burgers.

  4. Arrange on the prepared baking sheet. Bake for 15-20 minutes, or until browned.

  5. Heat the oil in a large frying pan until very hot. Fry the burgers over medium heat for 2 minutes. Turn them and cook on the other side for 2 minutes.

  6. Serve hot with bread and salad.
