Spicy Rice
and Lentil Burgers Recipe

1 cup/180 g cooked rice

3 cups/300 g brown
lentils,
cooked and
drained

1 carrot, peeled and coarsely grated

1 cup/125 g fine dry bread crumbs
-
2 tbsp smooth peanut butter
-
2 tbsp finely
chopped parsley
-
1 tsp dried basil
-
1 tsp dried oregano
-
1 tsp paprika
-
1/4 tsp salt
-
6 tbsp sesame
oil
Method:

Preheat
the oven to 375°F/190°C/gas 5.
Oil a baking sheet.

Use your hands to mix
the rice, lentils, carrot, bread crumbs, peanut
butter, parsley, basil, oregano, paprika, and
salt in a large bowl to make a stiff dough.

Form the mixture into burgers about 3 inches (8 cm)
in diameter and 1 inch (2.5 cm) thick. The mixture
will make 8-10 burgers.

Arrange on the prepared baking sheet.
Bake for 15-20 minutes, or until browned.

Heat the oil in a large frying pan until very hot.
Fry the burgers over medium heat for 2 minutes. Turn
them and cook on the other side for 2 minutes.

Serve hot with bread and salad.
