Sautéed
Peas with Fennel Seeds Recipe
Ingredients

1 lb/500
g hulled/shelled
peas
-
1 onion, finely chopped
-
4 tbsp extra-virgin olive
oil
-
1 tbsp fennel seeds,
crushed
-
salt and freshly ground
white pepper to taste

1 tbsp tom basil
-
1 tbsp finely
chopped
parsley
Method:
-
Cook the peas
in salted boiling water for
10-15
minutes, or until tender. Drain well.
Sauté the
onion in the oil in a large frying pan over low
heat for 10 minutes, or until light golden
brown.
Add the peas
and fennel seeds. Season with salt and pepper.
Sauté over
high heat for 3-4 minutes. Sprinkle with the
basil and parsley. Serve hot.
