Sautéed Peas with Fennel Seeds Recipe

 

Ingredients

 

Serve 4

  • 1 lb/500 g hulled/shelled peas

  • 1 onion, finely chopped

  • 4 tbsp extra-virgin olive oil

  • 1 tbsp fennel seeds, crushed

  • salt and freshly ground white pepper to taste

  • 1 tbsp tom basil

  • 1 tbsp finely chopped parsley


Method:

  1. Cook the peas in salted boiling water for 10-15 minutes, or until tender. Drain well.

  2. Sauté the onion in the oil in a large frying pan over low heat for 10 minutes, or until light golden brown.

  3. Add the peas and fennel seeds. Season with salt and pepper.

  4. Sauté over high heat for 3-4 minutes. Sprinkle with the basil and parsley. Serve hot.
