Roast Potatoes with Mixed Herbs Recipe

 

Ingredients

 

Serve 6-8

  • 2 1/2 lb/1.25 kg yellow-fleshed potatoes, peeled

  • 1 bulb garlic

  • 2 sprigs fresh thyme

  • 2 sprigs fresh marjoram

  • 2 sprigs fresh mint

  • 4 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste


Method:

  1. Preheat the oven to 425°F/220°C/gas 7.

  2. Chop the potatoes into bite-size pieces and arrange them in a nonstick baking dish.

  3. Add the cloves of garlic (with peel), thyme, marjoram, and mint. Drizzle with the oil and season with salt and pepper.

  4. Roast for about 20 minutes, or until golden and tender, turning the potatoes occasionally.

  5. Discard the garlic and season with salt and pepper. Serve hot.
