Radicchio Treviso-Style Recipe

 

Ingredients

 

Serve 6

  • 6 heads Treviso radicchio or red chicory

  • 3-4 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste


Method:

  1. Rinse the radicchio heads thoroughly under cold running water and dry well.

  2. Trim off the end of the stalk and cut each head lengthwise into quarters.

  3. Grease a large frying pan with 1 tablespoon of oil. Place the radicchio pieces in the frying pan in a single layer.

  4. Drizzle with the remaining oil and season with salt and pepper.

  5. Cook over low heat for 15-20 minutes, or until the radicchio is tender but still crisp. Serve hot.
