1 1/4 lb/575 g pumpkin

4 bell peppers, seeded, cored, and cut into lengths

2 red onions, cut
into quarters

16 cherry tomatoes
-
2 fresh red
spicy chili peppers
-
4 cloves garlic, lightly crushed but whole
-
2 tbsp finely chopped thyme
-
5 tbsp extra-virgin
olive oil
-
1 tbsp honey
-
salt to taste
Method:
-
Preheat the oven to
400°F/200°C/gas 4.

Cut the
pumpkin in half and remove the seeds and peel.
Cut into 2-inch (5-cm) lengths.

Transfer the
pumpkin to a large baking dish with the bell
pepper, onions, tomatoes, chili peppers and
garlic.

Drizzle with
the oil and honey and sprinkle with the thyme
and salt.

Bake for
50-60 minutes, or until the pumpkin is lightly
browned, turning the vegetables for even baking.

Let cool for
5 minutes and serve with toasted bread.
