Pumpkin Bake Recipe

 

Ingredients

 

Serve 4-6

  • 1 1/4 lb/575 g pumpkin

  • 4 bell peppers, seeded, cored, and cut into lengths

  • 2 red onions, cut into quarters

  • 16 cherry tomatoes

  • 2 fresh red spicy chili peppers

  • 4 cloves garlic, lightly crushed but whole

  • 2 tbsp finely chopped thyme

  • 5 tbsp extra-virgin olive oil

  • 1 tbsp honey

  • salt to taste


Method:

  1. Preheat the oven to 400°F/200°C/gas 4.

  2. Cut the pumpkin in half and remove the seeds and peel. Cut into 2-inch (5-cm) lengths.

  3. Transfer the pumpkin to a large baking dish with the bell pepper, onions, tomatoes, chili peppers and garlic.

  4. Drizzle with the oil and honey and sprinkle with the thyme and salt.

  5. Bake for 50-60 minutes, or until the pumpkin is lightly browned, turning the vegetables for even baking.

  6. Let cool for 5 minutes and serve with toasted bread.
