Potatoes Baked in Sour Cream Recipe

 

Ingredients

 

Serve 4

  • 2 lb/1 kg potatoes

  • 1/2 cup/125 ml sour cream

  • 1 clove garlic, finely chopped

  • 2 tbsp finely chopped mint

  • 2 tbsp torn basil

  • 2 hard-boiled eggs, thinly sliced


Method:

  1. Cook the potatoes in their skins in salted, boiling water for 15-20 minutes, or until tender. Drain well. Slip off their skins and slice thinly.

  2. Preheat the oven to 350°F/180°C/gas 4. Butter a baking dish and lay the slices of potato in the dish.

  3. Pour in the sour cream. Sprinkle with garlic and herbs and top with the egg.

  4. Bake for 20-25 minutes, or until golden. Serve hot.
