Piquant Onions and Tomatoes Recipe

 

Ingredients

 

Serve 4

  • 2 firm-ripe tomatoes

  • 1/2 red bell pepper, seeded, cored, and finely chopped

  • 1 small green chili pepper, seeded and finely sliced

  • 4 tbsp extra-virgin olive oil

  • 2 lb/1 kg onions, quartered

  • salt to taste

  • 2 tbsp finely chopped marjoram


Method:

  1. Peel the tomatoes, squeezing gently to remove as many seeds as possible. Chop coarsely.

  2. Sauté the bell pepper and chili pepper in the oil in a medium saucepan over high heat for 7-10 minutes, or until the bell pepper begins to soften.

  3. Add the tomatoes and onions. Season with salt, cover and cook for 35-40 minutes, or until the vegetables are tender.

  4. Let cool  completely.  Sprinkle with the marjoram and serve.
