Onions and Tomatoes Recipe
Ingredients

2 firm-ripe tomatoes

1/2 red bell pepper, seeded, cored, and
finely chopped

1 small green
chili pepper, seeded and finely sliced
-
4 tbsp extra-virgin olive oil
-
2 lb/1 kg onions, quartered
-
salt to taste
-
2 tbsp finely chopped marjoram
Method:
-
Peel
the tomatoes, squeezing gently to remove as many
seeds as possible. Chop coarsely.
-
Sauté the bell pepper and
chili pepper in the oil in
a medium saucepan over high heat for
7-10
minutes, or until the bell pepper begins to soften.
-
Add the tomatoes and onions. Season with salt, cover
and cook for 35-40
minutes, or until the
vegetables are tender.

Let cool completely.
Sprinkle
with the marjoram and serve.
