Oregano-Spiced Mixed Vegetables Recipe

 

Ingredients

 

Serve 4

  • 4 tbsp extra-virgin olive oil

  • 7 oz/200 g firm­ripe tomatoes

  • 7 oz/200 g waxy potatoes    

  • 10 oz/300 g mixed cultivated mushrooms

  • salt and freshly ground black pepper to taste

  • 1 tbsp dried oregano


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Grease an ovenproof dish with 2 tablespoons of oil.

  2. Cut the tomatoes into 1/2-inch (1-cm) slices. Peel the potatoes and slice them thinly.

  3. Slice the mushrooms thinly lengthwise. Arrange a layer of potatoes, mushrooms, and tomatoes on the bottom of the prepared dish.

  4. Season with salt and pepper and drizzle with the remaining oil. Sprinkle with the oregano.

  5. Bake for 30 minutes. Set aside for a few minutes before serving.
