Mixed Grilled Vegetables Recipe

 

Ingredients

 

Serve 4

  • 2 yellow bell peppers, seeded

  • 2 red radicchio

  • 3 firm-ripe tomatoes

  • 2 eggplants/aubergines

  • 4 zucchini/courgettes

  • 4 potatoes

  • 2 tbsp extra-virgin olive oil

  • salt to taste


Method:

  1. Wash and chop the vegetables into large chunks. Brush with the oil and season with salt.

  2. Cook the vegetables in small batches in a grill pan for about 10 minutes, or until tender.

  3. Transfer to a serving plate and serve.
