Grilled Vegetables Recipe

 

Ingredients

 

Serve 4

  • 2 zucchini/courgettes, thickly sliced lengthwise

  • 2 tomatoes, halved

  • 2 onions, halved

  • 2 eggplants/aubergines, thickly sliced lengthwise

  • 6 tbsp extra-virgin olive oil

  • 3 tbsp fresh lemon juice

  • salt and freshly ground black pepper to taste


Method:

  1. Arrange the vegetables in small batches on a grill pan and grill for about 8 minutes, or until tender.

  2. Mix the oil and lemon juice in a small bowl. Season with salt and pepper and drizzle the dressing over the vegetables.
