2 zucchini/courgettes, thickly sliced lengthwise

2 tomatoes, halved

2 onions, halved

2 eggplants/aubergines, thickly sliced lengthwise

6 tbsp extra-virgin olive oil

3 tbsp fresh lemon juice

salt and freshly ground black pepper to taste
Method:

Arrange
the vegetables in small batches on a grill pan and
grill for about 8 minutes, or until
tender.

Mix the oil and lemon juice in a small
bowl. Season with salt and pepper and drizzle the
dressing over the vegetables.
