Garlic-Marinated Zucchini Recipe

 

Ingredients

 

Serve 4

  • 6 tbsp extra-virgin olive oil

  • 3 cloves garlic, finely chopped

  • 1 small bunch fresh basil, torn

  • 1/8 tsp mild chili powder

  • 1/8 tsp salt

  • 6 zucchini/courgettes


Method:

  1. Mix the oil, garlic, basil, chili powder, and salt in a small bowl.

  2. Wash the zucchini, pat dry on paper towels, and slice finely lengthwise.

  3. Brush with the marinade and let marinate for about 1 hour.  Drain the marinade from the zucchini slices.

  4. Arrange the zucchini in small batches on a grill pan. Grill for about 8 minutes, or until tender, brushing with the marinade during cooking.

  5. Transfer to a serving plate and serve hot.
