Baked Red Lentils Recipe

 

Ingredients

 

Serve 4

  • 2 cups/300 g red lentils

  • 2 quarts/2 liters water

  • 1 small bunch mixed aromatic herbs (such as parsley, cilantro/ coriander, and thyme)

  • 2 cloves garlic

  • 1 small bunch parsley

  • salt to taste

  • 1/2 cup/50 g fine dry bread crumbs


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 9-inch (23-cm) ovenproof baking dish.

  2. Wash the lentils well and place in a large saucepan. Pour in the water and add the herbs.

  3. Cook over low heat for 25-30 minutes, or until tender. Drain, discarding the herbs.

  4. Place in a food processor and chop with the garlic, parsley, and salt until pureed. Stir in the bread crumbs.

  5. Spoon the mixture into the prepared dish. Bake for 40-45 minutes, or until lightly browned. Serve hot.
