Baked Bell Peppers Recipe

 

Ingredients

 

Serve 4

  • 1 medium green bell pepper

  • 1 medium red bell pepper

  • 1 medium yellow bell pepper

  • 20 black olives, quartered

  • 4 tbsp pine nuts

  • 2 tbsp capers

  • 10-12 leaves fresh basil, torn

  • 6 tbsp extra-virgin olive oil

  • salt to taste

  • 4 tbsp fine dry bread crumbs


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Oil a large baking dish.

  2. Slice the bell peppers from top to bottom into quarters. Remove the stalks and hard parts and the core and seeds.

  3. Rinse the bell peppers and dry well. Cut into 1 /2-inch (1-cm) strips and transfer to a large bowl.

  4. Add the olives, pine nuts, capers, and basil. Add 5 tablespoons of oil and season with salt. Toss well.

  5. Arrange the bell pepper mixture in the prepared baking dish, pressing down gently. Sprinkle with the bread crumbs.

  6. Bake for 30-35 minutes, or until the bell peppers are tender. Serve warm.
