Baked Pumpkin with Wine Recipe

 

Ingredients

 

Serve 4

  • 1 small pumpkin or winter squash, seeded and thinly sliced

  • 2 tbsp extra-virgin olive oil

  • 1 sprig rosemary, finely chopped, + extra leaves to garnish

  • 6 tbsp butter

  • 4 oz/125 g baby onions, peeled

  • 1/2 cup/125 ml dry white wine

  • 1 tbsp granulated sugar

  • salt and freshly ground black pepper to taste

  • 2 amaretti cookies, crushed


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Line a baking sheet with waxed paper.

  2. Arrange the pumpkin slices on the prepared sheet. Drizzle with the oil and bake for 20 minutes. Sprinkle with the rosemary and bake for 5 more minutes.

  3. Melt the butter over medium heat in a small saucepan. Add the onions and sauté for 5 minutes.

  4. Pour in the wine and add the sugar. Cook for 5-10 minutes, or until the onions are tender and glossy.

  5. Arrange the pumpkin on a serving plate. Add the onions and season with salt and pepper.

  6. Sprinkle with the crushed amaretti cookies and rosemary and serve.
