Sweet Spicy
Bean Curd Recipe

2 tbsp
extra-virgin olive oil

2 lb/1 kg
bean curd or tofu, cut into small cubes

2
scallions/spring onions, finely chopped
-
2 cloves
garlic finely chopped
-
1 tsp finely
chopped fresh ginger
-
2 small red
chili peppers, finely chopped
-
1 tbsp dry
sherry
-
1 1/2 tbsp
soy sauce
-
1 cup/250 ml
+ 1 tbsp water
-
1/2 tsp salt
-
1 1/2 tsp
cornstarch/corn flour
Method:
-
Heat the oil in a large wok or frying pan over
medium-high heat.

Sauté the bean curd,
half the scallions, 1 clove garlic, and ginger for 3
minutes.
Add the chili peppers and cook for 1 minute.

Stir in the sherry, soy sauce, 1 cup
(250
ml) of water, and salt. Bring to a boil and cook for
3 minutes.

Mix the remaining water and cornstarch in a small
bowl. Stir into the wok to
thicken the mixture.

Sprinkle with the remaining scallion and garlic.
Transfer to a heated plate
and serve hot.
