Sweet Spicy Bean Curd Recipe

 

Ingredients

  • 2 tbsp extra-virgin olive oil

  • 2 lb/1 kg bean curd or tofu, cut into small cubes

  • 2 scallions/spring onions, finely chopped

  • 2 cloves garlic finely chopped

  • 1 tsp finely chopped fresh ginger

  • 2 small red chili peppers, finely chopped

  • 1 tbsp dry sherry

  • 1 1/2 tbsp soy sauce

  • 1 cup/250 ml + 1 tbsp water

  • 1/2 tsp salt

  • 1 1/2 tsp cornstarch/corn flour


Method:

  1. Heat the oil in a large wok or frying pan over medium-high heat.

  2. Sauté the bean curd, half the scallions, 1 clove garlic, and ginger for 3 minutes. Add the chili peppers and cook for 1 minute.

  3. Stir in the sherry, soy sauce, 1 cup (250 ml) of water, and salt. Bring to a boil and cook for 3 minutes.

  4. Mix the remaining water and cornstarch in a small bowl. Stir into the wok to thicken the mixture.

  5. Sprinkle with the remaining scallion and garlic. Transfer to a heated plate and serve hot.
