Stuffed Braised Zucchini Recipe

 

Ingredients

 

Serve 4

  • 4 zucchini/courgettes

  • 1 tbsp finely chopped parsley

  • 1 clove garlic, finely chopped

  • 1/2 cup/50 g fine dry bread crumbs

  • 1/2 cup/50 g freshly grated Parmesan cheese

  • 1 egg

  • 2 tbsp milk

  • 1 scallion/spring onion, finely chopped

  • 4 tbsp butter

  • 2 tbsp chopped tomatoes

  • salt and freshly ground black pepper to taste

  • 1 cup/250 ml water


Method:

  1. Trim the ends off the zucchini and cut in half lengthwise. Scoop out the centers and finely chop the flesh.

  2. Mix the zucchini flesh, parsley, garlic, bread crumbs, Parmesan, egg, and milk in a medium bowl. Spoon the mixture into the hollowed-out zucchini.

  3. Sauté the scallion in the butter in a large frying pan over medium heat until softened. Add the tomatoes and season with salt and pepper.

  4. Arrange the zucchini in the pan with the tomato mixture. Pour in the water.

  5. Braise over medium heat for 20 minutes. Serve hot.
