Stuffed Potatoes Recipe

 

Ingredients

 

Serve 4-6

  • 10 large baking potatoes

  • 1/2 cup/125 ml extra-virgin olive oil

  • 1 onion, finely chopped

  • 4 cups/500 g freshly grated Parmesan or Cheddar cheese

  • 3 tbsp finely chopped parsley

  • salt and freshly ground black pepper to taste

  • 2 tbsp butter, melted

  • 1/2 cup/60 g fine dry bread crumbs


Method:

  1. Use a sharp knife to hollow out the potatoes, leaving the sides 1 inch (2.5 cm) thick. Reserve the scooped-out potato. 

  2. Mix the oil, onion, the potato, three-quarters of the Parmesan, parsley, and salt and pepper in a large bowl.

  3. Fill the potatoes with the stuffing and arrange them in a flameproof casserole.

  4. Pour in about 1 cup (250 ml) of water. Drizzle with the butter and sprinkle with the bread crumbs and the remaining Parmesan.

  5. Cook over medium heat for about 45 minutes, or until the potatoes are tender.

  6. Turn the broiler (grill) to the high setting. Broil for 5-10 minutes, or until the potatoes are browned. Serve hot.
