Stewed Artichoke Hearts Recipe

 

Ingredients

 

Serve 6

  • 1/2 cup/125 ml extra-virgin olive oil

  • 2 tbsp finely chopped parsley

  • 2 cloves garlic, finely chopped

  • 12 fresh or frozen raw artichoke hearts

  • salt and freshly ground black pepper to taste


Method:

  1. Pour the oil into a large frying pan and add the parsley and garlic. Sauté over low heat for 5 minutes.

  2. Add the artichoke hearts and season with salt and pepper.

  3. Pour in enough water to cover the artichokes completely. Cover and cook over medium-low heat for 10 minutes.

  4. Remove the lid, increase the heat and cook for 10 more minutes to reduce the cooking liquid. Serve hot or at room temperature.
