Spiced Beans with Apple Recipe

 

Ingredients

 

Serve 2-4

  • 1 small onion, finely sliced

  • 2 tbsp extra-virgin olive oil

  • 1/2 tsp ground turmeric

  • 1/2 tsp ground allspice

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground cumin

  • 2 apples, cored and cut into bite-size pieces

  • 2 tbsp sugar

  • 2 cups/350 g canned cannellini or white kidney beans

  • 1/2 cup/125 ml water + more as needed

  • salt and freshly ground black pepper to taste


Method:

  1. Sauté the onion in the oil in a large frying pan over medium heat for 2-3 minutes, or until golden.

  2. Add the spices and cook for 2 minutes, taking care not to allow the spices to burn.

  3. Add the apples and sugar and cook for 5-10 minutes, or until the apples have softened.

  4. Add the beans and just enough water to cover the base of the pan. Season with salt and pepper.

  5. Cover and cook for about 10 minutes. Serve hot with Basmati or Thai rice.
