Savory Onions and Tomatoes Recipe

 

Ingredients

 

Serve 6

  • 2 lb/1 kg onions, peeled and sliced                   

  • 1/2 cup/12S ml extra-virgin olive oil

  • 1 red bell pepper and 1 yellow bell pepper/capsicum, seeded, cored, and cut into small pieces

  • 1 1/4 lb/600 g ripe tomatoes, blanched and peeled

  • salt and freshly ground black pepper to taste


Method:

  1. Sauté the onions in the oil in a large frying pan until golden. Add the bell peppers and cook for 10 minutes.

  2. Coarsely chop the tomatoes and add to the pan. Season with salt and pepper.

  3. Simmer over low heat for 30 minutes, stirring occasionally. Serve hot or at room temperature.
