Potato, Green Bean and Tomato Stew Recipe

 

Ingredients

 

Serve 4-6

  • 12 oz/350 g potatoes, peeled and coarsely chopped

  • 12 oz/350 g green beans, topped and tailed

  • 1 onion, finely chopped,

  • 1 clove garlic, finely chopped

  • 1 tbsp finely chopped parsley

  • 4 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 3 large tomatoes, peeled and coarsely chopped


Method:

  1. Cook the potatoes in salted boiling water for 15-20 minutes, or until almost tender. Drain and set aside.

  2. Blanch the green beans in salted boiling water for 5 minutes, or until almost tender. Drain and chop into short lengths. 

  3. Sauté the onion, garlic, and parsley in the oil in a large frying pan over medium heat until the garlic is pale gold.

  4. Season with salt and pepper. Add the tomatoes and cook for 10 minutes.

  5. Stir in the potatoes and green beans and tomatoes and cook for 10-15 more minutes. Serve hot.
