Onion and Orange Marmalade Recipe

 

Ingredients

 

Serve 4

  • 2 lb/1 kg white onions, sliced

  • 6 tbsp extra-virgin olive oil

  • 1/3 cup/70 g granulated sugar

  • 1 1/4 cups/310 ml fresh orange juice

  • salt to taste


Method:

  1. Place the onions in a bowl and cover with cold water until you are ready to use them.

  2. Heat the oil over medium heat in a large nonstick frying pan.

  3. Add the sugar and stir until completely dissolved, about 5 minutes.

  4. Beat in the orange juice. Drain the onions and add them to the pan.

  5. Cook over medium heat for about 15 minutes, or until the onions are very tender and the mixture is glossy. Season with salt. Serve warm.
