Orange Marmalade Recipe

2 lb/1
kg white onions, sliced

6 tbsp extra-virgin olive oil

1/3 cup/70 g granulated sugar

1 1/4 cups/310 ml fresh orange juice

salt to taste
Method:

Place
the onions in a bowl and cover with cold water until
you are ready to use them.

Heat the oil over medium heat in a large nonstick
frying pan.

Add the sugar and stir until completely dissolved,
about 5 minutes.
-
Beat in the orange juice.
Drain the onions and add them to the pan.
-
Cook over
medium heat for about 15 minutes, or until the
onions are very tender and the mixture is glossy.
Season with salt.
Serve
warm.
