Japanese-Style Bean Stew Recipe
Ingredients

1 lb/500 g green beans
-
4 tbsp extra-virgin olive
oil
-
3
cloves garlic, finely chopped
-
1 tbsp salt-cured capers, rinsed
of
salt and finely chopped
-
10 walnuts, finely chopped
-
1 tsp chili paste
-
2 tsp black olive paste
-
1/2 tsp gomashio (Japanese salt
and sesame mix)
-
juice of 1/2
grapefruit
Method:
-
Place
the
beans in a large pot with enough water to cover.
Bring to a boil and simmer over low heat for 10
minutes.

Pour
off most of the cooking water, leaving just enough
to cover the beans.

Add the oil, garlic, capers,
walnuts, and chili paste. Cook over low heat for
about 15 minutes, or until the beans are tender.

Remove from the heat. Mix in the olive paste,
gomashio, and grapefruit juice, and mix well.
Serve hot.
