Florentine Green Beans Recipe

 

Ingredients

 

Serve 4

  • 1 1/4 /b/575 g green beans, topped, and tailed

  • 1 clove garlic, finely chopped

  • 1 onion or shallot, very thinly sliced

  • 4 tbsp extra-virgin olive oil

  • 1 tsp crushed fennel seeds

  • 2 large ripe tomatoes, skinned, seeded, and diced

  • salt and freshly ground black pepper to taste

  • 1-2 tbsp hot water


Method:

  1. Cook the beans in salted, boiling water until crunchy-tender. . Drain and set aside.

  2. Sauté the garlic and onion in the oil in a large frying pan over medium heat until the garlic is pale gold.

  3. Add the fennel seeds and tomatoes. Season with salt. Simmer over low heat for 4 minutes.

  4. Add the green beans. Season with pepper and mix carefully.

  5. Cover and cook for about 12 minutes, adding the water if the mixture starts to stick to the pan. Serve hot.
