Fava Bean and Pea Stew Recipe

 

Ingredients

 

Serve 4-6

  • 4 artichokes

  • 1 lemon

  • 1 small onion, finely chopped

  • 4 tbsp extra-virgin olive oil

  • 1 lb/500 g hulled/shelled fava beans, 1 lb/500 g hulled/ shelled peas

  • 1/8 tsp freshly grated nutmeg

  • salt and freshly ground black pepper to taste

  • 1 tbsp finely chopped mint

  • 1 tsp sugar

  • 1 tsp vinegar


Method:

  1. Remove the outer leaves from the artichokes and trim the tops and stalks. Cut them in half and remove the choke.

  2. Cut the tender hearts in thin wedges. Rub all over with the lemon to prevent discoloring.

  3. Sauté the onion in the oil in a large frying pan over medium heat for 3-4 minutes, or until softened.

  4. Add the artichokes and cook for 5 minutes. Add the fava beans, peas, and nutmeg. Season with salt and pepper and cook over medium-low heat for about 25 minutes, or until tender.

  5. Stir in the mint, sugar, and vinegar a few minutes. Serve at room temperature.
