Tofu Recipe

1 onion, finely chopped

1 clove garlic, finely chopped

3 tbsp extra-virgin
olive oil

1 tsp curry powder

salt to taste

6 tomatoes, peeled and chopped

14 oz/400
g tofu, cubed
Method:

Sauté
the onion and garlic in the oil in a large frying
pan over low heat until the garlic is pale gold.

Add the curry powder and season with salt.
Cook for 1 minute.

Stir in the tomatoes and cook
for about 5 minutes, or until they begin to break
down.
Add the tofu and cook for 20 minutes.
-
Serve hot with vegetables as a main course or at
room temperature as an appetizer.
