Curried Tofu Recipe

 

Ingredients

 

Serve 4

  • 1 onion, finely chopped

  • 1 clove garlic, finely chopped

  • 3 tbsp extra-virgin olive oil

  • 1 tsp curry powder

  • salt to taste

  • 6 tomatoes, peeled and chopped

  • 14 oz/400 g tofu, cubed


Method:

  1. Sauté the onion and garlic in the oil in a large frying pan over low heat until the garlic is pale gold.

  2. Add the curry powder and season with salt. Cook for 1 minute.

  3. Stir in the tomatoes and cook for about 5 minutes, or until they begin to break down. Add the tofu and cook for 20 minutes.

  4. Serve hot with vegetables as a main course or at room temperature as an appetizer.
