1/8 tsp ground cinnamon

1 tbsp ghee clarified butter)

2 onions, finely
chopped

1 bay leaf

1/2 tsp chili powder
-
1/2 tsp ground coriander
-
1/8 tsp ground turmeric
-
4 firm-ripe tomatoes, finely chopped
-
1 eggplant/aubergine, thickly sliced
-
1 spicy fresh red
chili pepper, sliced

salt to taste
Method:
-
Sauté
the cinnamon in the ghee in a large frying pan over
medium heat for 1 minute.
-
Add the onions and bay leaf and cook until the
onions are golden.
Add the chili powder, coriander, and turmeric.
-
Cook
for 5 minutes.
Add the tomatoes, eggplant, and chili pepper. Season
with salt.

Cook over low heat
for 20-25
minutes, or until the vegetables are tender.
Serve hot.
