Curried Eggplants Recipe

 

Ingredients

 

Serve 6

  • 1/8 tsp ground cinnamon

  • 1 tbsp ghee clarified butter)

  • 2 onions, finely chopped

  • 1 bay leaf

  • 1/2 tsp chili powder

  • 1/2 tsp ground coriander

  • 1/8 tsp ground turmeric

  • 4 firm-ripe tomatoes, finely chopped

  • 1 eggplant/aubergine, thickly sliced

  • 1 spicy fresh red chili pepper, sliced

  • salt to taste


Method:

  1. Sauté the cinnamon in the ghee in a large frying pan over medium heat for 1 minute.

  2. Add the onions and bay leaf and cook until the onions are golden. Add the chili powder, coriander, and turmeric.

  3. Cook for 5 minutes. Add the tomatoes, eggplant, and chili pepper. Season with salt.

  4. Cook over low heat for 20-25 minutes, or until the vegetables are tender. Serve hot.
