Banana Curry Recipe

 

Ingredients

 

Serve 4

  • 1 1/2 lb/750 g unripe bananas

  • 4 tbsp butter

  • 1 clove garlic, finely chopped

  • 1/2 tsp ground turmeric

  • 1/2 tsp cumin seeds

  • 1 fresh spicy red chili pepper, thinly sliced

  • 1 tsp salt

  • 1/2 tsp garam masala

  • 1 tbsp milk

  • 1 tbsp fresh lemon juice


Method:

  1. Peel the bananas, remove the filaments, and chop into 1-inch (2.5 cm) rounds.

  2. Melt the butter in a large frying pan and sauté the garlic, turmeric, and cumin seeds over medium heat until the garlic is pale gold.

  3. Add the bananas, chili pepper, and salt. Cook over low heat for 5-7 minutes, or until the bananas have softened.

  4. Add the garam masala and salt and mix well, taking care not to squash the bananas.

  5. Drizzle with the lemon juice and cook over low heat for 10 minutes, or until the liquid has reduced by half. Serve hot.
