Artichokes Provencal Style Recipe

 

Ingredients

 

Serve 4

  • 6 artichokes

  • 1 lemon

  • 2 onions, finely chopped

  • 2 cloves garlic, finely chopped

  • 4 tbsp extra-virgin olive oil

  • 1 cup/250 ml dry white wine

  • salt and freshly ground black pepper to taste

  • 1 tsp finely chopped thyme

  • 1 bay leaf


Method:

  1. Remove the tough outer leaves from the artichokes by snapping them off at the base.

  2. Cut off the top third of the remaining leaves. Cut the artichokes in half, removing any fuzzy choke with a sharp knife. Rub with the lemon.

  3. Sauté the onions and garlic in the oil in a large frying pan over medium heat until the garlic is pale gold.

  4. Add the 48 artichokes and pour in the wine. Cook for 7-10 minutes, or until the artichokes are tender, stirring often.

  5. Season with salt and pepper. Add the thyme and bay leaf.  Cover and cook over low heat for 40-45 minutes, or until the artichokes are tender.

  6. Arrange the artichokes on a serving plate and spoon the sauce over the top.
