Special Lentil Soup Recipe

 

Ingredients

 

Serves 4

  • 1 cup/200 g dried black beans, soaked overnight and drained

  • 1 cup/200 g dried garbanzo beans/ chick peas, soaked overnight and drained

  • 1 cup/200 g lentils

  • 2 quarts/2 liters water

  • 1 small onion, finely chopped

  • 1/2 tsp caraway seeds

  • 4 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 1 cup/200 g rice


Method:

  1. Place the beans in a large saucepan with water. Cook for 30 minutes.

  2. Add the lentils and cook for 25-30 minutes more, or until the beans and lentils are tender.

  3. Sauté the onion and caraway seeds in the oil in a large saucepan over medium heat until lightly browned. Season with salt and pepper.

  4. Add the beans, lentils, and rice and cook for 12-15 minutes, or until the rice is tender. Serve hot.
