Semolina Whisked in Stock
Recipe
Ingredients
Serves 4-6

1 2/3 cups/250 g semolina

1 cup/125 g freshly grated Pecorino cheese
-
1 bunch parsley, finely chopped

2 eggs
-
2 quarts/2 liters Vegetable Stock
Method:

Mix the semolina,
Pecorino, eggs, and parsley together in a bowl.

Bring the stock
to a boil in a large saucepan and gradually stir in
the semolina mixture.
-
Simmer over low
heat for 5-10 minutes, stirring often.

Transfer to a
tureen or soup bowls and serve hot.
