Semolina Whisked in Stock Recipe

 

Ingredients

 

Serves 4-6

  • 1 2/3 cups/250 g semolina

  • 1 cup/125 g freshly grated Pecorino cheese

  • 1 bunch parsley, finely chopped

  • 2 eggs

  • 2 quarts/2 liters Vegetable Stock


Method:

  1. Mix the semolina, Pecorino, eggs, and parsley together in a bowl.

  2. Bring the stock to a boil in a large saucepan and gradually stir in the semolina mixture.

  3. Simmer over low heat for 5-10 minutes, stirring often.

  4. Transfer to a tureen or soup bowls and serve hot.
