Red Lentil Soup Recipe

 

Ingredients

 

Serves 4

  • 2 tbsp butter

  • 2 medium onions, finely chopped

  • 2 cups/200 g red lentils, well-washed

  • 1 quart/1 liter Vegetable Stock

  • 1 tbsp tomato concentrate/puree

  • salt to taste

  • 1 tbsp finely chopped parsley

  • croutons, to serve


Method:

  1. Melt the butter in a large saucepan over medium heat. Sauté the onions for 8-10 minutes, or until lightly browned.

  2. Stir in the lentils, stock, and tomato concentrate. Season with salt. Cook for 25-30 minutes, or until the lentils are tender.

  3. Remove from the heat and chop in a food 264 processor until smooth.

  4. Sprinkle with the parsley and serve with croutons on the side.
