Red Lentil Soup Recipe
Ingredients
Serves 4

2 tbsp butter
-
2 medium onions,
finely chopped
-
2 cups/200 g red lentils, well-washed
-
1 quart/1 liter Vegetable Stock
-
1 tbsp tomato concentrate/puree
-
salt to taste
-
1 tbsp finely chopped
parsley
-
croutons, to serve
Method:

Melt the butter in a large saucepan over medium heat.
Sauté the onions for 8-10
minutes, or until lightly browned.

Stir in the lentils,
stock, and tomato concentrate. Season with salt. Cook for
25-30
minutes, or until the lentils are
tender.
-
Remove from the heat and chop in a food 264 processor
until smooth.
-
Sprinkle with the parsley and serve with croutons on the
side.
