Potato Herb Soup Recipe

 

Ingredients

 

Serves 4

  • 1 onion, finely chopped

  • 2/3 cup/150 g butter

  • 3 oz/90 g celery stalks, coarsely chopped

  • 3 oz/90 g watercress, coarsely chopped

  • 1 bunch parsley

  • 1 quart/1 liter water

  • salt and freshly ground black

  • pepper to taste

  • 2 lb/1 kg potatoes, peeled and cut in small cubes

  • 2-4 leaves fresh basil, torn

  • 4 tbsp sour cream


Method:

  1. Sauté the onion in 6 tablespoons of butter in a large saucepan over low heat until lightly browned.

  2. Add the celery, watercress, and parsley. Cover and cook over low heat for 5 minutes.

  3. Pour in the water and season with salt. Add the potatoes and cook for 30 minutes, or until the potatoes are tender.

  4. Run through a vegetable mill or chop in a food processor until smooth.

  5. Return to the saucepan over low heat and stir in the remaining butter.

  6. Ladle into soup bowls and garnish with pepper, basil, and sour cream.
