Potato Herb Soup
Recipe
Ingredients
Serves 4

1 onion, finely chopped
-
2/3 cup/150 g butter
-
3 oz/90 g celery stalks, coarsely chopped
-
3 oz/90 g watercress, coarsely chopped
-
1 bunch parsley
-
1 quart/1 liter water
-
salt and freshly ground black
-
pepper to taste
-
2 lb/1 kg potatoes, peeled and cut in small
cubes

2-4 leaves fresh basil, torn
-
4 tbsp sour cream
Method:
-
Sauté
the onion in 6 tablespoons of butter in a large
saucepan over low heat until lightly browned.

Add the celery,
watercress, and parsley. Cover and cook over low
heat for 5 minutes.

Pour in the water
and season with salt. Add the potatoes and cook for
30 minutes, or until the potatoes are tender.

Run through a
vegetable mill or chop in a food processor until
smooth.

Return to the
saucepan over low heat and stir in the remaining
butter.

Ladle into soup
bowls and garnish with pepper, basil, and sour
cream.
