Mixed Vegetable Soup with Basil Recipe

 

Ingredients

 

Serves 4

  • 4 cups/400 g kidney beans

  • 1 1/3 cups/125 g green beans

  • 2-3 medium potatoes, cubed

  • 2-3 medium carrots, sliced

  • 2-3 zucchini/courgettes, sliced

  • 3 tomatoes, chopped

  • 1 onion, chopped

  • 4 quarts/4 liters water

  • salt and freshly ground black pepper to taste

  • 7 oz/200 g soup pasta

  • 1/2 cup/125 ml Pesto (refer recipe)


Method:

  1. Soak the kidney beans in cold water for 12 hours. Drain.

  2. Place the kidney, green beans, potatoes, carrots, zucchini, tomatoes, and onion in a large saucepan with the water. Season with salt and pepper.

  3. Bring to a boil and cook, stirring often, over low heat for 1 hour.

  4. Add the pasta and cook for 15 minutes more. Spoon the pesto onto the soup. Serve hot.
