Millet and Walnut Soup Recipe

 

Ingredients

 

Serves 4

  • 1/2 cup/50 g walnuts

  • 1 small onion, finely chopped

  • 1/4 Savoy cabbage, finely shredded

  • 4 tbsp extra-virgin olive oil

  • 2 cups/400 g millet, washed and drained

  • 2 tbsp shoyu (sweet soy sauce)

  • 1/8 tsp salt

  • 1 1/4 quarts/1.25 liters water

  • 1 tbsp finely chopped parsley


Method:

  1. Preheat the oven to 400°F/200°C/gas 6.

  2. Roast the walnuts on a baking sheet for 15 minutes. Rub off the outer skins.

  3. Sauté the onion and cabbage in the oil in a large saucepan over medium heat for 5 minutes, or until softened.

  4. Add the millet, shelled walnuts, shoyu, and salt. Pour in the water and cover the pan.

  5. Cook for 30 minutes, stirring occasionally. Serve in individual soup bowls, sprinkled with the parsley.
