Gazpacho with Yogurt Recipe

 

Ingredients

 

Serves 4

  • 1 clove garlic, finely chopped

  • 1 onian, finely chopped

  • 1 cup/250 g chopped tomatoes

  • 1 cucumber, finely chopped

  • 1 red bell pepper/ capsicum, seeded, cored, and finely chopped

  • 1 green bell pepper/capsicum, seeded, cored, and finely chopped

  • 2 cups/500 ml tomato juice

  • 1 tbsp vinegar

  • salt and freshly ground black pepper to taste

  • 2 tbsp finely chopped parsley

  • 2 scallions/spring onions, finely chopped

  • 2 oz/50 g bread, cut into small cubes

  • 1 tbsp extra-virgin olive oil

  • 4 tbsp plain yogurt


Method:

  1. Process the garlic, half the onion, half the chopped vegetables, and half the tomato juice in a food processor or blender until smooth.

  2. Stir in the remaining tomato juice and vinegar. Season with salt and pepper.

  3. Add the parsley and scallions. Refrigerate for 1 hour.

  4. Sauté the bread in the oil in a small frying pan until golden brown and crisp all over. Stir in the remaining chopped vegetables.

  5. Drizzle with the yogurt and garnish with the croutons.
