Gazpacho with Yogurt
Recipe
Ingredients
Serves 4

1 clove garlic, finely chopped

1 onian, finely chopped

1 cup/250 g chopped tomatoes

1 cucumber, finely chopped
-
1 red bell pepper/ capsicum, seeded, cored, and
finely chopped
-
1 green bell pepper/capsicum, seeded, cored, and
finely chopped

2 cups/500 ml tomato juice
-
1 tbsp vinegar
-
salt and freshly ground black pepper to taste

2 tbsp finely chopped parsley
-
2 scallions/spring onions, finely chopped
-
2 oz/50 g bread, cut into small cubes

1 tbsp extra-virgin olive oil

4
tbsp plain yogurt
Method:
-
Process the
garlic, half the onion, half the chopped vegetables,
and half the tomato juice in a food processor or
blender until smooth.

Stir in the
remaining tomato juice and vinegar. Season with salt
and pepper.

Add the parsley
and scallions. Refrigerate for 1 hour.

Sauté the bread
in the oil in a small frying pan until golden brown
and crisp all over. Stir in the remaining chopped
vegetables.

Drizzle with the
yogurt and garnish with the croutons.
