Gazpacho with Bell Pepper
Recipe
Ingredients
Serves 4

2-3 thick slices
day-old firm-textured bread
-
4 tbsp extra-virgin olive
oil + extra to serve

2 tsp sherry wine vinegar
or 1 tbsp white
vinegar
-
salt to taste
-
6 large tomatoes, peeled and coarsely
chopped
-
1 red bell pepper/capsicum, seeded and coarsely chopped
-
1 large cucumber, peeled
-
1 hard-boiled egg, shelled and coarsely chopped
-
3 cloves garlic
-
4 tbsp cold water (If
needed)
-
salt and freshly around
black pepper
to taste
-
croutons or squares of warm
toast, to serve
Method:
-
Soak the bread in the oil, vinegar, and salt for 15
minutes.

Place the tomatoes, bell pepper, cucumber, egg, garlic,
and bread mixture in a food processor and chop until
smooth.
-
If too dense, add the water.
Season with salt and pepper, drizzle with oil, and serve
hot with the croutons or squares of warm toast.
