Gazpacho with Bell Pepper Recipe

 

Ingredients

 

Serves 4

  • 2-3 thick slices day-old firm-textured bread

  • 4 tbsp extra-virgin olive oil + extra to serve

  • 2 tsp sherry wine vinegar or 1 tbsp white vinegar

  • salt to taste

  • 6 large tomatoes, peeled and coarsely chopped

  • 1 red bell pepper/capsicum, seeded and coarsely chopped

  • 1 large cucumber, peeled

  • 1 hard-boiled egg, shelled and coarsely chopped

  • 3 cloves garlic

  • 4 tbsp cold water (If needed)

  • salt and freshly around black pepper to taste

  • croutons or squares of warm toast, to serve


Method:

  1. Soak the bread in the oil, vinegar, and salt for 15 minutes.

  2. Place the tomatoes, bell pepper, cucumber, egg, garlic, and bread mixture in a food processor and chop until smooth.

  3. If too dense, add the water. Season with salt and pepper, drizzle with oil, and serve hot with the croutons or squares of warm toast.
