Focaccia with Tomatoes and Zucchini Recipe

 

Ingredients

 

Makes one (10x15-inch/25x30cm) Focaccia 

  • 1 Quantity Focaccia Dough

  • 2 zucchini/courgettes, thinly sliced

  • 24 cherry tomatoes, cut in half

  • salt and freshly ground black pepper to taste

  • 3 tbsp extra-virgin olive oil

  • 1/2 tsp dried oregano


Method:

  1. Prepare the focaccia dough and set aside to rise (about 1 hour). Oil a 10x 15-inch (25 x 38-cm) baking pan.

  2. Roll the dough out into a rectangle to fit the pan and place in the pan. Let rise for 30 more minutes.

  3. Preheat the oven to 450°F/220°C/gas 7. Bake for 25-30 minutes, or until golden brown.

  4. While the focaccia is in the oven, cook the zucchini and tomatoes in a grill pan until tender. Season with salt and pepper.

  5. Place the grilled vegetables on the hot focaccia, drizzle with the oil, and dust with the oregano. Serve immediately.
