Focaccia with Potatoes and Oregano Recipe

 

Ingredients

 

Makes one (10x15-inch/25x30cm) Focaccia 

  • 1 quantity Focaccia Dough (refer recipe)

  • 1 lb/500 g potatoes

  • salt and freshly ground black pepper to taste

  • 1 tsp dried oregano

  • 6 tbsp extra-virgin olive oil


Method:

  1. Prepare the focaccia dough and set aside to rise (about 1 hour). Oil a 10 x 15-inch (25 x 38-cm) baking pan.

  2. Roll the dough out into a rectangle to fit the pan and place in the pan. Let rise for 30 more minutes.

  3. Preheat the oven to 450°F/220°C/gas 7. Peel and thinly slice the potatoes.

  4. Arrange them in single layer on top of the dough. Season with salt and pepper and sprinkle with oregano. Drizzle with 4 tablespoons of oil.

  5. Bake for 20-25 minutes, or until lightly browned. Drizzle with the remaining oil during baking to prevent the surface from drying out. Serve hot.
