Focaccia with Cherry Tomatoes and Bell Peppers Recipe

 

Ingredients

 

Makes one (12-inch/30cm) Focaccia 

  • 1 Quantity Focaccia Dough

  • 2 zucchini/courgettes, thinly sliced

  • 2 tbsp extra-virgin olive oil

  • 1 tsp water

  • salt to taste

  • 12 cherry tomatoes, halved

  • 1 red bell pepper, seeded, cored, and cut into strips

  • 2 tbsp pine nuts

  • fresh basil, torn, to garnish


Method:

  1. Prepare the focaccia dough and set aside to rise (about 1 hour). Oil a 10 x 15-inch (25 x 38-cm) baking pan.

  2. Roll the dough out into a rectangle to fit the pan and place in the pan. Dimple with your fingertips. Let rise for 30 more minutes.

  3. Preheat the oven to 450°F/220°C/gas 7. Arrange the tomatoes, bell pepper, pine nuts, and basil on the dough. Drizzle with the oil.

  4. Bake for 25-30 minutes, or until golden brown. Serve hot.
