Focaccia with Cherry Tomatoes and Bell
Peppers Recipe
Ingredients
Makes
one (12-inch/30cm) Focaccia

1 Quantity Focaccia Dough
-
2 zucchini/courgettes, thinly sliced
-
2 tbsp extra-virgin olive oil
-
1 tsp water
-
salt to taste
-
12 cherry tomatoes, halved
-
1 red bell pepper, seeded, cored, and cut into
strips
-
2 tbsp pine nuts
-
fresh basil, torn, to garnish
Method:

Prepare the
focaccia dough and set aside to rise (about 1 hour).
Oil a 10 x 15-inch (25 x 38-cm) baking pan.

Roll the dough
out into a rectangle to fit the pan and place in the
pan. Dimple with your fingertips. Let rise for 30
more minutes.

Preheat the
oven to 450°F/220°C/gas 7. Arrange the tomatoes,
bell pepper, pine nuts, and basil on the dough.
Drizzle with the oil.

Bake for 25-30
minutes, or until golden brown. Serve hot.
