Cream of Scallion Soup Recipe

 

Ingredients

 

Serves 4

  • 8 scallions/spring onions, very thinly sliced (reserve a few rings to garnish)

  • 1 tbsp butter

  • 3 cups/750 ml Vegetable Stock

  • 1 cup/250 ml milk

  • 1 tbsp cornstarch/corn flour

  • salt to taste

  • 1/2 tsp freshly grated nutmeg

  • 1 tbsp finely chopped parsley

  • 4 tbsp freshly grated Parmesan cheese

  • 2 egg yolks, lightly beaten


Method:

  1. Sauté the scallions in the butter in a large saucepan over low heat until softened.

  2. Heat the vegetable stock and milk in separate saucepans. . Sprinkle the scallions with the cornstarch.

  3. Gradually pour in the stock, alternating with the milk, stirring constantly. Season with salt and nutmeg.

  4. Cook for 20 minutes over low heat, stirring often. Add the parsley, Parmesan, and egg yolks, beating until just blended.

  5. Cook for 5 minutes more and serve hot.
