Cream of Mushroom Soup Recipe

 

Ingredients

 

Serves 4

  • 3/4 oz/25 g dried porcini mushrooms

  • 2 cups/500 ml warm water

  • 1 onion, finely chopped

  • 4 tbsp extra-virgin olive oil

  • 1 lb/500 g white mushrooms, chopped

  • 1 quart/1 liter Vegetable Stock

  • 4 tbsp heavy/double cream

  • salt and freshly ground black pepper to taste


Method:

  1. Soak the dried porcini mushrooms in the warm water for 20 minutes.

  2. Sauté the onion in the oil in a large frying pan over medium heat until lightly browned. Add the mushrooms and sauté for 5 minutes.

  3. Pour in the vegetable stock and dried mushrooms and their liquid.

  4. Bring to a boil, then simmer for 30 minutes. Remove from the heat and transfer to a food processor or blender. Process until smooth.

  5. Return the mixture to the saucepan. Add the cream and season with salt and pepper. Serve hot, with croutons, if liked.
