Chilled Yogurt Soup with Cucumber and Raisins Recipe

 

Ingredients

 

Serves 4

  • 1/2 cup/125 ml heavy/double cream

  • 2 cucumbers, peeled

  • 1 quart/1 liter plain yogurt (thick Greek yogurt is Ideal)

  • 1 cup/250 ml ice water

  • 4 leeks, white part only, very thinly sliced and separated into rings

  • salt and freshly ground black pepper to taste

  • 4 tbsp crushed ice cubes

  • 4 tbsp golden raisins/sultanas

  • 1 bunch fresh mint leaves, finely chopped


Method:

  1. Beat the cream in a large bowl with an electric mixer at high speed until stiff.

  2. Grate the cucumbers into a bowl (reserve a few slices to garnish), then squeeze out excess moisture.

  3. Place the yogurt and ice water in a large bowl and stir in the cucumbers, leeks, and cream. Season with salt and pepper.

  4.  Ladle into individual bowls and place a little of the crushed ice at the center of each portion.

  5. Garnish with the golden raisins and mint. Serve immediately.
