Carrot and Cilantro Soup Recipe

 

Ingredients

 

Serves 4-6

  • 1 large onion, finely chopped

  • 2 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 1 lb/500 g carrots, peeled and chopped

  • 3 medium potatoes, peeled and chopped

  • 1 stalk celery, finely chopped

  • 2-3 tbsp finely chopped fresh cilantro/coriander

  • 2 tbsp finely chopped fresh parsley

  • 1 clove garlic, peeled

  • 1 1/2 quarts/1.5 liters boiling Vegetable Stock or water

  • 2 tbsp crème fraiche


Method:

  1. Sauté the onion in the oil with a pinch of salt in a large saucepan over medium heat for 5 minutes, or until tender.

  2. Add the carrots, potatoes, celery, cilantro, parsley, and garlic.

  3. Pour in the stock and simmer over low heat for 30 minutes, or until the carrots and potatoes are tender.

  4. Process the mixture in a food processor or blender until smooth.

  5. Return the soup to the saucepan and season with salt and pepper. If it is too thick, add a little water.

  6. Reheat over low heat. Stir in the crème fraiche. Ladle into soup bowls and serve hot.
