Baked Soup with Pecorino Cheese
Recipe
Ingredients
Serves 6

4 oz/125 g
Pecorino cheese, thinly sliced

12 slices toasted bread
-
2 quarts/2 liters Vegetable Stock

salt and freshly ground black pepper to taste
Method:

Preheat
the oven to 400°F/200°C/gas 6.

Arrange alternating layers of Pecorino and toast in a
large ovenproof baking dish.

Finish with a layer of
cheese. Season with salt and pepper.

Pour the hot stock over top and bake for about 20
minutes.
Serve hot.
