Baked Soup with Pecorino Cheese Recipe

 

Ingredients

 

Serves 6

  • 4 oz/125 g Pecorino cheese, thinly sliced

  • 12 slices toasted bread

  • 2 quarts/2 liters Vegetable Stock

  • salt and freshly ground black pepper to taste


Method:

  1. Preheat the oven to 400°F/200°C/gas 6.

  2. Arrange alternating layers of Pecorino and toast in a large ovenproof baking dish.

  3. Finish with a layer of cheese. Season with salt and pepper.

  4. Pour the hot stock over top and bake for about 20 minutes. Serve hot.
