Wheat and Barley Salad Recipe

 

Ingredients

 

Serve 4

  • 3/4 cup/150 g wheat berries

  • 3/4 cup/150 g pearl barley

  • salt and freshly ground black pepper to taste

  • 7 oz/200 g green beans, topped and tailed

  • 1 clove garlic, finely chopped

  • 1 tbsp finely chopped parsley

  • 4 tbsp extra-virgin olive oil


Method:

  1. Cook the wheat berries in salted, boiling water for 1 hour until tender. Drain.

  2. Bring 2 cups (500 ml) of water to a boil and season with salt. Add the barley and cover and cook for about 30 minutes, or until tender.

  3. Drain the wheat berries and barley, leaving a small amount of liquid. Transfer to a salad bowl.

  4. Blanch the green beans in salted, boiling water for 5 minutes. Drain and add to the grains.

  5. Sauté the garlic and parsley in the oil in a small saucepan until the garlic is pale gold.

  6. Pour the flavored oil over the grains. Season with salt and pepper, toss well, and serve.
