Wheat and
Barley Salad Recipe

g wheat berries

3/4 cup/150
g
pearl barley

salt and freshly ground black pepper to taste

g green beans, topped and tailed

1 clove garlic, finely chopped

1 tbsp finely chopped parsley
-
4 tbsp extra-virgin
olive oil
Method:
-
Cook the wheat berries in salted, boiling water
for 1 hour until tender.
Drain.

Bring
2 cups (500
ml) of water to a boil and season with salt. Add the
barley and cover and cook for about 30 minutes, or
until tender.

Drain the wheat berries and barley, leaving a small
amount of liquid. Transfer to a salad bowl.

Blanch the green beans in salted, boiling water for
5 minutes. Drain and add to the grains.

Sauté the garlic and parsley in the oil in a small
saucepan until the garlic is pale gold.

Pour the flavored oil over the grains. Season with
salt and pepper, toss well, and serve.
