Vegetable Salad Recipe

peeled

1 1/2 lb/650 g broccoli florets

3 tbsp finely chopped parsley

6 tbsp extra-virgin olive oil

salt and freshly ground black
pepper to taste
Method:

Preheat the
oven to 400°F/200°C/gas 6. Bake the onions whole
in their skins for
40 minutes.

Peel and cut into segments.
Cook the potatoes in a large pot of salted, boiling
water for 15-20 minutes, or until tender. Drain
and cut into bite-size pieces.

Cook the broccoli in a large pot of salted, boiling
water for 5-7 minutes, or until tender. Drain.

Place the onions, potatoes, and broccoli in a large
salad bowl.

Add the parsley and oil. Season with salt and pepper
and toss well.
Serve warm.
