Warm Vegetable Salad Recipe

 

Ingredients

 

Serve 6

  • 4 large onions

  • 4 large potatoes, peeled

  • 1 1/2 lb/650 g broccoli florets

  • 3 tbsp finely chopped parsley

  • 6 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Bake the onions whole in their skins for 40 minutes.

  2. Peel and cut into segments. Cook the potatoes in a large pot of salted, boiling water for 15-20 minutes, or until tender. Drain and cut into bite-size pieces.

  3. Cook the broccoli in a large pot of salted, boiling water for 5-7 minutes, or until tender. Drain.

  4. Place the onions, potatoes, and broccoli in a large salad bowl.

  5. Add the parsley and oil. Season with salt and pepper and toss well. Serve warm.
